Got this recipe from Recipezaar by Chickee. Made my own sushi 3 times so far, and dare I say it was quite good and easy & fast to make.

This recipe is enough to make 10 huge rolls. I just cut the ingredients into half to make 5 myself.

Ingredients:
25 min 10 min prep
2 1/2 cups short-grain rice, sushi rice, I got Nishiki brand.
100 ml rice vinegar
60 ml mirin
3 teaspoons caster sugar
2 teaspoons salt

Cook the rice as normal using the ricecooker. Meanwhile, mix up the dressing by combining all remaining ingredients. Stir well to dissolve the sugar and the salt. (Yes, the vinegar mix smell is supposed to be a bit funky).
Once the rice cooker has finished cooking, let it sit on 'Heat' for 5 minutes.
Take out the rice cooker bowl and sit it on a trivet on your benchtop.
Grab a friend with a handheld fan or set up an electric fan a little way away from the bowl.
Take the dressing and a small plastic rice paddle, and pour a little of the dressing in a spiral pattern over the rice (starting from the outside).
Using the rice paddle, lightly stir/mix the rice while your friend fans the rice (or you have the fan on low). Continue in this fashion until all of the dressing is used, the rice is cool and glossy.

Fillings:
- toasted sesame seeds
- sliced cucumber
- salmon (raw or cooked with sweet teriyaki sauce)
- a little bit of mayo mixed with a bit of Sriracha spicy sauce if you like it that way.

Dip:
- soy sauce
- wasabi
- pickled ginger

To roll, put a ball of the rice (small fist size, don't be tempted to put too much) onto the nori. Dip your hand in vinegary water, and then use your hand to spread the rice on the nori. put the ingredients horizontally 1/3 away from one edge, then roll. You don't really need the bamboo thingy to roll, but it does make the job a hell lot easier.
