Dear all,
Tested in Choc’s kitchen tonight. It’s edible. I copied this recipe from a cooking book titled ‘Cooking for One’. I have modified it slightly to make sure that NO bits get wasted!.

1 onion (sliced)
1 lemon
1 bunch of Thai Basil Leaves

1 tbm fish sauce
1 small tomato (diced)
1-2 cloves garlic (chopped)
1 small chilli (seeded, thinly sliced)
350 gr chicken mince

Cara:
1. Put 1 tbm of fish sauce & 1 tbm of lemon juice together with diced tomato, mix them well.

2. Marinate chicken mince with salt, sugar & pepper for 10 mins

3. Fry garlic,chilli & half of the sliced onion for 1 min, add chicken & cook till lightly browned, add fish sauce mixture in, let it cook till the tomato is soft. Add half a bunch of Basil last.

Now what to do with the leftover onion, lemon & basil leaves? Cook the same dish the next day (change chicken to kangaroo or rabbit mince if you wish..)
